Have you heard of Lara Bars before?
They are super healthy bars that contain only a few ingredients...nuts and dried fruit! Yesterday I was at Haggen and wanted to see how much they cost, they were $2.00 EACH!!! Isn't that crazy. If everyone in my family wanted a Lara Bar for a snack it would be $12.00. No way.
Luckily I know how to make them myself. Here's how you do it...
1 1/2 Cups of your favorite nuts. We did equal parts almonds and cashews
1/4 tsp. salt
12 Medjool dates
1 cup of dried fruit.
For the first batch we used dried apricots and for the 2nd batch dried cherries.

1)
In a food processor, pulse only the nuts and the sea salt until finely
chopped but still chunky. Some will be ground up almost like almond meal
but they will not all be consistent, and that’s totally ok.
2)Pour your nuts into a mixing bowl.
3)Add
the dried dates and other dried fruit to the food processor and process
until it makes a paste (it will probably turn into a giant sticky ball
when it’s done).
4)Combine the nut mixture and fruit mixture together. Roll into balls or bars.
It's fun to come up with all different variations. Robby really wants me to make some with dark chocolate and coconut! This is a much better snack to give your kids then cookies, cracker, or fruit snacks. Try it you will be hooked!
Cherry Larabars are my favorite thing in the world. yum! But, yes, too pricey. I will have to try these out!
