Preparing quick meals doesn't really exist anymore. I feel like I am officially a homemaker wearing an apron and never leaving the kitchen. I am enjoying this part about this Paleo Challenge actually more than I thought but it is a lot of work. The hardest part about switching to Paleo is that I am learning as I go and so it is taking me longer to figure out how to make quick and easy meals. This has been a regular lunch or snacks for the boys. Boiled eggs, ham, and veggies. The good things is that they are enjoying eating this and they are staying full for longer.
Earlier today I made more Lara Bar Balls for Robby and the boys. I know if I keep eating these I will gain weight. The recipe is the same as the Cherry Lara Bar below but I added a 1/2 Cup of dark chocolate and a 1/2 Cup of Coconut.
If you want to feel good about eating chocolate than read this...

Those Lara Bars look amazing! For weight loss, you're right... stay away from the starches (yams etc.), nuts and fruits....HOWEVER: once you're at the weight you'd like to be, you can add some nuts/fruits/yams etc. for the maintenance stage. Does that make sense?
ReplyDeleteAnd I don't know about you, but sometimes the scale isn't always an accurate portrayal of our health. I want you to be able to eat sweet potatoes and eat your lara bars, and not be worried about gaining a few pounds...but I think if you started weight training, you'll find that the glucose and sugars from the starches and fruits will feed your muscles and you can eat more!
Ok, night :) Love the snack plate...it looks so yummy. Your boys are so lucky to have you prepare them such delicious goodies. You're such a great mom, April!
